Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • ½ cup honey
  • cup low-sodium soy sauce
  • ¼ cup ketchup
  • 4 garlic cloves, minced
  • 1 tablespoon rice vinegar optional
  • 1 teaspoon sesame oil optional
  • 1 tablespoon cornstarch + 2 tablespoons water for thickening
  • Sesame seeds and chopped green onions for garnish

Instructions

Prep the Chicken:

  • Cut the chicken into bite-sized pieces and place them in the crockpot.

Make the Sauce:

  • In a small bowl, whisk together honey, soy sauce, ketchup, garlic, rice vinegar, and sesame oil. Pour the sauce over the chicken, ensuring it’s evenly coated.

Cook:

  • Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and fully cooked.

Thicken the Sauce:

  • In the last 30 minutes of cooking, mix the cornstarch and water in a small bowl to make a slurry. Stir it into the crockpot and let the sauce thicken.

Serve:

  • Sprinkle sesame seeds and green onions on top. Serve warm as an appetizer or over rice for a main meal.

Notes

  • Use chicken thighs for juicier bites or chicken breasts for a leaner option.
  • For extra texture, broil the chicken bites for 2-3 minutes after cooking to caramelize the sauce.
