Ingredients

  • 3 big sized potatoes or 5 small ones cut very finely
  • 2 tbsp oil
  • 1/2 tsp cumin seeds / jeera
  • 1/4 tsp fennel seeds / saunf / sambu
  • 1 sprig of curry leaves
  • 2 - 3 whole dry red chili
  • 1 medium sized onion, finely chopped

Make a paste

  • 1 pod small garlic
  • 3 - 4 whole dry red chili

Instructions

  • Heat oil in a kadai. Add the cumin seeds, fennel seeds, curry leaves and dry red chili. Give it a stir and add the onions. Fry till the onions are lightly brown in color.
  • Next add the finely chopped potatoes. Cook on high heat till all the moisture is absorbed from the potatoes and they start turning brown.
  • Reduce the flame and cook with lid closed. Stir frequently in between. Switch off the flame when the potatoes turn soft and are cooked.
  • Serve hot with some dal and rice.

Notes

Cut the potato into really small pieces. If you want to save time, then simply boil or pressure cook the potatoes and mash them lightly.
You can also crush the garlic and chili with a stone pestle. The flavor and aroma will be really amazing.
