This ground turkey stir fry is one of those easy weeknight dinners that saves me every time. It is simple, fast, and full of flavor. The ground turkey cooks up juicy, the veggies add crunch, and the sauce ties everything together with a little sweet and savory flavor. Perfect for busy nights when you just need to get dinner on the table without losing your mind.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil or sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger fresh
  • 2 cups mixed vegetables like broccoli, bell peppers, or snap peas
  • 1/4 cup soy sauce use low-sodium if you want
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  • Heat sesame oil in a big skillet or wok over medium heat. Add ground turkey and break it apart while cooking. Cook until it turns brown and there is no pink left.
  • Add minced garlic and grated ginger to the pan. Stir for about a minute until it smells amazing.
  • Toss in your chopped veggies. Stir and cook for around 5 minutes until they are soft but still a little crisp.
  • In a small bowl, whisk together soy sauce, honey, and rice vinegar. Pour the sauce into the pan and stir it all together.
  • Mix cornstarch with water and pour it into the pan. Stir for 1 to 2 minutes until the sauce thickens and coats the turkey and veggies.
  • Turn off the heat and top with sesame seeds or green onions. Serve over rice, noodles, or even in lettuce wraps.

Tips

  • Fresh garlic and ginger make a big difference in flavor.
  • Do not overcrowd the pan or the turkey will steam instead of brown.
  • Add chili flakes or sriracha if you like a bit of spice.
  • Double the sauce if you like it extra saucy.
