Ground Turkey Enchiladas

These ground turkey enchiladas are my go-to dinner when I need something easy, filling, and super tasty. They are perfect for busy weeknights when everyone is hungry but I do not want to spend hours cooking. My teens love the cheesy goodness and I love how simple it is to throw together. You can make it ahead, freeze it, or just bake it fresh — it is one of those meals that always saves the day.

Ingredients

  • 1 pound ground turkey
  • 1 small onion chopped
  • 2 cloves garlic , minced
  • 1 bell pepper , chopped
  • 1 can black beans, drained and rinsed optional
  • 1 cup corn optional
  • 1 cup shredded cheese cheddar or Mexican blend
  • 8 small flour tortillas
  • 1 1/2 cups enchilada sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, avocado slices, cilantro, lime wedges

Instructions

Cook the turkey and veggies

  • Heat olive oil in a big pan over medium heat. Add the chopped onion and garlic. Cook until soft and smells really good. Add the ground turkey and cook until it is no longer pink. Break it apart while cooking.

Add the spices

  • Sprinkle in chili powder, cumin, salt, and pepper. Mix everything well so the spices coat the turkey.

Mix in beans, corn, and bell pepper

  • Add black beans, corn, and chopped bell pepper. Stir it all together and let it cook for a few more minutes.

Fill the tortillas

  • Spoon a few big spoonfuls of the turkey mixture into each tortilla. Roll them up and place them in a greased baking dish until all are used.

Add sauce and cheese

  • Pour enchilada sauce over the rolled tortillas. Sprinkle shredded cheese on top to cover them.

Bake it

  • Cover the dish with foil and bake at 375°F (190°C) for 20 minutes. Then remove the foil and bake for another 5 minutes until the cheese is bubbly and golden.

Serve with toppings

  • Let it cool a little before serving. Add sour cream, avocado, cilantro, or lime wedges if you like.

Notes

Tips

  • You can use ground chicken if that is what you have. It still tastes really good.
  • This recipe is great to make ahead and freeze. Just wrap it up and bake it when you need it.
  • Add more or less spice depending on what your family likes.
  • Sneak in extra veggies like spinach or zucchini for added nutrition.

Variations

  • Use corn tortillas instead of flour for a different texture.
  • Add cooked rice to the filling to make it even more filling.
  • Top with olives or jalapenos if your family likes extra flavors.
  • Try homemade enchilada sauce for a fresher taste.
