This ground turkey and peppers recipe is one of those easy meals with ground turkey that I always go for when life gets super busy. It is simple to make, full of flavor, and my teen kids always love it. You can switch it up with whatever veggies you have and make it mild or a little spicy depending on what everyone likes!

Ingredients
1poundground turkey
2or 3 bell peppersred, yellow, green – any you have
Optional toppings: shredded cheese, parsley, hot sauce
Instructions
Step 1 – Cook the turkey
Heat a big pan on medium heat. Add the olive oil. When it is warm, add the ground turkey and break it up with a spatula. Cook until it is no longer pink, about 5 to 6 minutes.
Step 2 – Add the onion and garlic
Put the sliced onion and minced garlic into the pan. Stir it around and let it cook for 3 to 4 minutes until the onions are soft and smell so good.
Step 3 – Add the peppers and spices
Add the chopped bell peppers to the pan. Sprinkle the paprika, chili powder, salt, and pepper on top. Stir everything together and cook for about 5 minutes until the peppers are soft but still a little crunchy.
Step 4 – Taste and adjust
Taste the dish and see if it needs more salt or spice. You can add more paprika or chili powder if you want it smokier or spicier.
Step 5 – Add toppings if you like
Sprinkle shredded cheese on top and let it melt. Add parsley for color or hot sauce if you want some heat. Serve it with rice, pasta, or tortillas.

Use any kind of peppers you have – mix colors to make it pretty and tasty.
If you want to stretch it for more people, add beans or corn.
Cook it until the peppers are soft but not mushy for the best texture.
Keep hot sauce on the side so everyone can add how much they like!
Variations
Add zucchini or mushrooms for extra veggies.
Serve it in taco shells with toppings like salsa and sour cream.
Skip the cheese or use a lighter version for a healthier option.
Make it more filling by adding cooked rice right into the pan before serving.
