1 ½ lbs boneless skinless chicken breasts or thighs 4 cups gluten-free chicken broth 1 small onion , chopped 3 carrots , peeled and sliced 2 celery stalks , chopped 3 garlic cloves, minced 1 tsp dried thyme 1 tsp dried parsley ½ tsp black pepper Salt to taste 1 bay leaf Juice from ½ lemon optional, but adds that zing 1 cup gluten-free pasta or rice optional if you want it heartier Fresh parsley on top if you feel fancy
