Ingredients

  • 1 ½ lbs boneless skinless chicken breasts or thighs
  • 4 cups gluten-free chicken broth
  • 1 small onion , chopped
  • 3 carrots , peeled and sliced
  • 2 celery stalks , chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • Salt to taste
  • 1 bay leaf
  • Juice from ½ lemon optional, but adds that zing
  • 1 cup gluten-free pasta or rice optional if you want it heartier
  • Fresh parsley on top if you feel fancy

Instructions

Step 1: Dump everything in

  • Toss in the chicken, broth, veggies, garlic, herbs, and spices into the crockpot. No need to stir. Just trust the process.

Step 2: Set it and walk away

  • Cover and cook on LOW for 6–8 hours or HIGH for about 4 hours. Go do mom stuff (or sneak in a TikTok scroll).

Step 3: Shred that chicken

  • Once it's all soft and cooked, take the chicken out and shred it with two forks. Then throw it back in the soup.

Step 4: Add the extras (if using)

  • If you’re adding gluten-free pasta or rice, toss that in about 20–30 mins before serving. Let it cook right in the soup.

Step 5: Taste test & finish

  • Squeeze in lemon juice for a little brightness. Sprinkle some fresh parsley if you want it to look cute. Salt and pepper to your liking!

Notes

  • Make it creamy: Stir in a splash of coconut milk or a spoon of dairy-free cream cheese.
  • Low carb fam? Skip the pasta and throw in more veggies like zucchini or spinach.
  • Batch cook like a boss: Double it and freeze half. This freezes like a dream.
  • Instapot hack: Use the “Soup” or “Slow Cook” function if you do not wanna drag out the big crock.

Variations

  • Spicy kick: Add a lil crushed red pepper or chopped jalapeño.
  • Mexican twist: Toss in cumin, corn, and a can of black beans.
  • Italian style: Add Italian seasoning and a can of diced tomatoes for a twist.
