Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 2 cups egg noodles or any noodles you like
  • Optional: Fresh parsley for garnish

Instructions

Prepare the Crockpot:

  • Place the chicken breasts at the bottom of the crockpot. Add chicken broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper. Stir everything together.

Cook the Soup:

  • Cover and cook on low for 6-7 hours or high for 3-4 hours. The chicken should be cooked through and easy to shred.

Shred the Chicken:

  • Once cooked, remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the soup.

Add the Noodles:

  • Stir in the egg noodles and cook on high for an additional 30 minutes, or until the noodles are tender. If you prefer, cook the noodles separately and add them at the end.

Serve:

  • Ladle soup into bowls and garnish with fresh parsley, if desired. Enjoy your warm, homemade soup!

Notes

  • For extra broth, add more chicken broth or water. 
  • Add extra veggies like spinach or peas for a twist. 
  • Use rotisserie chicken to save time—just shred and add at the end.
