Ingredients

  • 2 lbs chicken breasts boneless, skinless
  • 2 cans sweet corn 15 oz each
  • 1 can cream of chicken soup 10.5 oz
  • 1 can diced tomatoes with green chilies 14.5 oz
  • 1 onion , diced
  • 4 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 cup heavy cream optional

Toppings:

  • shredded cheese, sour cream, chopped green onions optional

Instructions

Dump all ingredients into the crockpot:

  • Chicken, corn, cream of chicken soup, tomatoes, onion, chicken broth, and spices.

Stir it up:

  • Mix everything well so the spices are evenly distributed.

Set and forget:

  • Cook on low for 6-7 hours or high for 3-4 hours.

Shred the chicken:

  • Once it’s done, take out the chicken breasts and shred with two forks.

Add the cream:

  • Stir the shredded chicken back into the soup, then add the heavy cream for extra richness.

Serve and enjoy:

  • Ladle into bowls and top with your favorite toppings.

Notes

  • For extra flavor, add a dash of hot sauce or jalapeños if you like it spicy.
