Ingredients

  • 1 lb ground beef or turkey optional
  • 16 oz Velveeta cheese cubed
  • 1 cup shredded cheddar cheese
  • 2 cups salsa mild or spicy
  • 1 can 10 oz diced tomatoes with green chilies (like Rotel)
  • 1/2 cup sour cream
  • 1 tsp taco seasoning optional

Instructions

Cook the Meat (if using):

  • Brown ground beef or turkey in a skillet over medium heat, drain any fat.

Add to Crockpot:

  • Place Velveeta, shredded cheddar, salsa, diced tomatoes, sour cream, taco seasoning, and cooked meat (if using) in the crockpot.

Cook:

  • Set the crockpot to low and let it cook for 2-3 hours. Stir occasionally to prevent sticking.

Serve:

  • Once melted and creamy, switch the crockpot to "warm" and serve with tortilla chips, crackers, or veggies.

Notes

  • Can be made vegetarian by skipping the meat and adding black beans or corn.
  • Leftovers can be stored in the fridge for up to 3-4 days. Reheat on low in the crockpot or microwave.
  • Want more heat? Add diced jalapeños or a splash of hot sauce!
