Beef and Black Bean Burritos

This beef and black bean burrito recipe is one of my easy dinner wins. It feels warm and simple, and my teens actually eat it without giving long speeches about why beans scare them. The filling cooks fast and tastes cozy. It is one of my favorite meals with black beans because it works on busy nights when life feels too loud.

Ingredients

Beef and Bean Filling

  • 1 pound ground beef
  • 1 can black beans drained and rinsed
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 packet taco seasoning
  • 1 half cup salsa
  • 1 tablespoon oil

Instructions

Step 1

  • Heat a pan with oil. Add the onion and cook till it smells kinda sweet.

Step 2

  • Add the garlic and ground beef. Break it up and cook till it is fully brown.

Step 3

  • Stir in taco seasoning, salsa, and the black beans. Let it cook a few minutes till it looks blended and happy.

Step 4

  • Warm the tortillas in a pan for a few seconds. Warm tortillas roll better and taste better.

Step 5

  • Place the beef and bean mix on each tortilla. Add cheese and toppings you like.

Step 6

  • Roll the burrito tight. Put it back in the pan for a minute if you want a little crunchy outside.

Notes

Tips

  • Make extra filling for teen snack attacks later.
  • Warm tortillas right before rolling or they tear and make me cry a little.
  • Add rice if you want thicker burritos.
  • Let the filling cool a bit before rolling to stop soggy tortillas.

  • Swap beef for chicken or turkey for a lighter vibe.
  • Make it vegetarian by skipping the beef and adding more beans or rice.
  • Add hot sauce if you want spice and drama.
  • Use whole wheat tortillas if you want a tiny healthy moment even on a tired day.
