Ingredients You Need

  • 1 pound ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can black beans, drained and rinsed (optional, but adds extra goodness)
  • 1 cup corn (optional, but my kids love it)
  • 1 cup shredded cheese (cheddar or Mexican blend works great)
  • 8 small flour tortillas
  • 1 1/2 cups enchilada sauce (store bought or homemade)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil for cooking

Optional toppings: sour cream, avocado slices, cilantro, lime wedges

Step by Step Instructions

1. Cook the turkey and veggies

In a big pan, heat a little olive oil over medium heat. Add the chopped onion and garlic. Cook until soft and smells so good. Then add the ground turkey and cook it until it is no longer pink. Make sure to break it apart with a spoon so it cooks evenly.

2. Add the spices
