It is one of those chicken soup crockpot recipes that feels like a hug in a bowl, but does not make you feel heavy after. I can toss it all in before school drop-off and just let it do its thing. It is one of my favs when I need easy dump crockpot soups with zero brain power.

This one is packed with flavor, but skips the pasta and rice. So it fits when I am tryin to eat a little lighter, but still need comfort food. It is also one of the easiest chicken dishes in crockpot to pull together when you got leftover rotisserie chicken in the fridge. You know, that one from two days ago that is about to hit the trash if you do not use it?

If you are lookin for easy chicken soups to make, or just need pot recipes easy for the week, this one hits. Works as a full meal, or a side with grilled cheese (for the carb eaters). Whether you call it soup chicken, chicken soup in slow cooker, or just dinner that nobody complains about—this soup is it.

You can even spice it up and make it a lil like a hearty slow cooker chicken stew or switch it to your pressure cooker if you forgot to start early (been there). It works as a base for so many chicken soups crockpot style, and it is one of those hearty dinner recipes crock pot people actually wanna eat again.

Let us get into it.

Ingredients

  • 2 cups shredded chicken (I usually use rotisserie)
  • 1 small onion, diced
  • 1 cup celery, chopped
  • 1 cup carrots, chopped (optional but I like the flavor)
  • 1 cup zucchini, chopped
  • 2 garlic cloves, smashed or chopped
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (more if your broth is low sodium)
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 1 bay leaf
  • 1 handful baby spinach (optional but pretty)

Step-by-Step Instructions

Step 1: Dump everything in the crockpot

I just toss the shredded chicken, all the chopped veggies, broth, thyme, salt, pepper, garlic, olive oil, and the bay leaf right into the crockpot. Give it a little stir with a spoon. It already smells good and it is not even cooking yet.

Step 2: Let it do its thing

Put the lid on and set it to low for 6 hours or high for 3 hours. I usually go with low, ’cause I start it before I take the kids to school. By dinner, the house smells amazing and I do not even remember I made it. Feels like magic.

Step 3: Taste test and finish

Once it is done cooking, I fish out the bay leaf and taste the broth. Sometimes it needs a little more salt or pepper. If I have spinach, I toss that in right at the end. It wilts quick and makes the soup look kinda fancy.

Step 4: Serve and survive

Scoop it into bowls, pass out some crackers or a slice of low carb toast, and boom—dinner is done. Nobody is hangry, and I feel like I did something right today.

FAQs

Can I use raw chicken instead of cooked or rotisserie?

Yes, totally. I do it all the time when I forget to grab rotisserie. Just toss in boneless chicken breasts or thighs and let it cook the same way. By the end, the chicken will be tender and easy to shred. Works great for chicken crockpot meals and all kinds of chicken based soups crock pot style.

How long does this soup last in the fridge?

Usually 3 to 4 days if you keep it in an airtight container. I heat up a bowl for lunch or pack it in my teen’s thermos for school. It is one of those chicken soup crockpot recipes that tastes even better the next day.

Can I freeze this soup?

Yes! Just skip the spinach if you are planning to freeze it, ’cause it gets mushy. Let the soup cool, pour it into freezer-safe containers, and pop it in. Great for easy dump crockpot soups on super busy nights.

What can I add if I want it more filling but still low carb?

Try riced cauliflower, chopped mushrooms, or more chicken. This soup is pretty flexible. It still stays low carb and cozy, like a hearty slow cooker chicken stew.
