Ingredients

  • 2 cups cooked shredded chicken (I used leftover rotisserie one day—game changer)
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small yellow onion, chopped real tiny

Step-by-Step Instructions

Step 1: Grab the slow cooker

Get that crockpot out. Mine lives under the cabinet where I keep the mismatched Tupperware.

Step 2: Toss everything in

Throw in your chicken, carrots, celery, onion, garlic, thyme, parsley, salt, pepper, broth, and olive oil. If you like that bay leaf thing, toss it in too.

  • 6 Quart Slow Cooker

Ingredients

  • 1 ½ lbs boneless skinless chicken breasts or thighs
  • 4 cups gluten-free chicken broth
  • 1 small onion , chopped
  • 3 carrots , peeled and sliced
  • 2 celery stalks , chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • Salt to taste
  • 1 bay leaf
  • Juice from ½ lemon optional, but adds that zing
  • 1 cup gluten-free pasta or rice optional if you want it heartier
  • Fresh parsley on top if you feel fancy

Instructions

Step 1: Dump everything in

  • Toss in the chicken, broth, veggies, garlic, herbs, and spices into the crockpot. No need to stir. Just trust the process.

Step 2: Set it and walk away

  • Cover and cook on LOW for 6–8 hours or HIGH for about 4 hours. Go do mom stuff (or sneak in a TikTok scroll).
