Masala Khakhra:
This type is a perfect blend of flavourful and tasty Indian spices. With the right proportion of chili powder, coriander powder, garam masala and many others, it can certainly make your taste buds happy.
What do you Need?
Wheat flour- 1 cup (150 grams),
gram flour- 2 tbsp,
oil- 2 to 3 tbsp,
dry fenugreek leaves- 1 tbsp,
asafoetida- 1 pinch,
carom seeds- 1/4 tsp,
turmeric powder- 1/4 tsp,
red chilly powder- 1/4 tsp,
green chilli – 1 (finely chopped),
salt- 1/2 tsp,
milk- 1/2 cup.
How to make?
- Mix wheat flour, gram flour, dry fenugreek leaves, asafoetida, turmeric powder, cumin seeds, red chilly powder, finely chopped green chillies, salt, and tsp of oil.
- Now, keep on adding milk and knead a firm dough out of the mixture. If needed, you can add 1 to 2 tsp of water while mixing.
- Cover the dough and keep it aside for around 20 minutes.
- Next, make small dough balls and roll them out thinly on the rolling board.
- Preheat a pan and place a thinly rolled khakhra over it.
- Roast it until the colour of the surface gets dark from both the sides.
- Take a clean muslin cloth and press the khakhra on all sides unless you get brown spots on the surface.
- That’s it! You can now store them in a container and relish eating for many days.
Pav Bhaji Khakhra:
To get the real essence of the popular Indian street side food called pav bhaji in your khakhra, you must opt for this flavour.
What do you need?
Oil- 4 tbsp,
chopped garlic- 1 tsp,
red chilly powder- 1 tsp,
pav bhaji masala- 1 tsp,
crushed tomato- 1 (big),
wheat flour- 1 cup.
How to make?
- Heat oil in a pan
- Add the chopped garlic and saute
- Next, mix the other ingredients and again saute for 5-7 minutes. Make sure to exclude wheat flour here.
- Cool it down.
- Now, take the flour in a bowl and add the prepared puree.
- You’ve to bind a semi-soft dough out of this.
- Make some small balls from this dough with your hand.
- Roll them out in the form of thin khakhras.
- Switch on the gas and cook them in such a way that they don’t have a single blister.
- Sprinkle pav bhaji masala and stack them one on top of another.
- Now, you need to heat the griddle and place a khakhra on that.
- Press it with a kitchen towel starting from the sides and coming to the centre.
- Flip the khakhra over and repeat the process.
Pudina Khakhra:
With the refreshing taste and goodness of mint, pudina khakhra will treat your taste buds in the freshest way ever.
What do you need?
Wheat flour- 1 cup,
turmeric powder- 1/4 tsp,
powdered mint- 1/2 tbsp,
red chilli powder- 1/2 tsp,
refined oil- 2 tbsp,
salt- 2 pinches.
How to make?
- Sieve the wheat flour with salt
- Mix all the ingredients with that and knead a soft dough out of it.
- Cover and keep it aside for 30 minutes.
- Divide it into small portions in the form of small balls.
- Roll them into thin patties.
- Now, roast each one of them until all of them are lightly brown on both the sides.
- After that, you should put all of them on a warm griddle one by one.
- Use low flame and roast while moving the griddle in the circular motion.
- The pudina khakhras are ready!
Ragi and Coriander Khakhra:
Made with finger millet flour and fresh coriander, this type of khakhra is worth eating!
What do you need?
Ragi (finger millet flour)- 5 tbsp,
Rice flour- 2 tbsp,
wheat flour- 5 tbsp,
lightly roasted cumin seeds- 1/2 tsp,
red chilli powder- 1/2 tsp,
oil- 3 tbsp,
salt to taste.
How to make?
- Mix all the ingredients in a bowl (except oil).
- Heat two tbsp of oil and mix it with the other ingredients
- Make a dough which is smooth and soft
- Dive it into small balls and roll out all of them into thin khakhras.
- Finally, grease the pan with a little oil and cook each side of the khakhras until they become brown.
