How to reduce bitterness in bitter gourd (Karela)

  1. The reduce the bitterness in the bittergourd or karela. Soak it in salt water for atleast half an hour. This reduces the bitterness. 
  2. Add amchur powder to the dish. Even this helps to neuter the bitterness.
  3. Boil bitter gourd for 2-3 minutes before use in salted water. After boiling, drop it in cold water for a while.
  4. You can also soak bitter gourd pieces in diluted yogurt for at least an hour before use.
  5.  Soak the pieces in tamarind juice before use.
