- The reduce the bitterness in the bittergourd or karela. Soak it in salt water for atleast half an hour. This reduces the bitterness.
- Add amchur powder to the dish. Even this helps to neuter the bitterness.
- Boil bitter gourd for 2-3 minutes before use in salted water. After boiling, drop it in cold water for a while.
- You can also soak bitter gourd pieces in diluted yogurt for at least an hour before use.
- Soak the pieces in tamarind juice before use.
