  • 1 whole chicken (about 3 to 4 pounds)

  • 2 bay leaves
  • Juice from 1 lemon (optional, but I love it)
  • Fresh parsley for the top (if you feel extra)

Step-by-Step Instructions

Step 1: Get That Chicken Ready

Take out anything stuffed inside the chicken. I know it feels weird, but just do it quick. Give the chicken a rinse with cold water and pat it dry with a paper towel.

Step 2: Fill the Slow Cooker

Put the whole chicken right in the slow cooker. Add all the chopped carrots, celery, onion, garlic, and the seasonings. Pour the water or broth in until everything is covered.

  • 6 Quart Slow Cooker

Ingredients

  • 1 whole chicken about 3 to 4 pounds
  • 4 carrots , peeled and chopped
  • 3 celery stalks , chopped
  • 1 onion , chopped
  • 3 garlic cloves, smashed
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or more to taste
  • ½ teaspoon black pepper
  • 8 cups water or chicken broth
  • 1 tablespoon lemon juice optional, but so good

Instructions

Step 1: Prep the Veggies

  • Chop your carrots, celery, and onion. Smash the garlic cloves. No need to be perfect. Just rough chop and toss in.

Step 2: Add Everything to the Crockpot

  • Put the whole chicken right in the middle. Add all the chopped veggies, garlic, and seasonings around it. Pour in the water or broth. Throw in the bay leaves.

Step 3: Cook Low and Slow

  • Put the lid on. Cook on low for 6 to 8 hours or high for 4 to 5 hours. Walk away. Let it do its thing.

Step 4: Shred the Chicken
