Ingredients You’ll Need

You probably already have most of this stuff in your pantry. And if you don’t—trust me, it’s worth the grocery run.

  • 1 lb ground beef (or turkey if that’s your thing)
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 1 can Rotel (or tomatoes with green chiles)
  • 1 can of corn, drained (optional, but the kids actually eat it, so we add it)
  • ½ cup salsa (mild, medium, or spicy—dealer’s choice)
  • 2½ cups beef broth
  • 8 oz spaghetti (break it in half so it fits in the pot)
  • 1½ cups shredded cheddar cheese
  • Toppings: sour cream, jalapeños, tortilla chips, cilantro… whatever your chaos crew likes

Step-by-Step Instructions

1. Brown the beef

Okay, I know we all want to just throw everything in the crockpot and pretend like we’re on one of those cooking shows, but browning the beef first makes it taste way better.
So—grab a skillet, cook up your ground beef, and drain the grease. Stir in your taco seasoning + a splash of water (just like taco night!).

2. Add stuff to the crockpot (aka dump and go)

Toss in your cooked beef, diced tomatoes, Rotel, corn, salsa, and beef broth.
Give it a good stir. I usually do this with one hand while holding a baby on my hip, so it doesn’t have to be fancy.

3. Set it and walk away

  • 6 Quart Slow Cooker

Ingredients

  • 1 lb ground beef or turkey
