Ingredients

  • 2 cups shredded rotisserie chicken (just pull it off the bone)
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, chopped small
  • 3 garlic cloves, smashed or chopped
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 1 cup noodles, rice, or orzo (whatever you have)
  • 1 handful baby spinach or chopped parsley (optional)
  • Juice of 1 lemon or a few slices to serve (optional)

Step-by-Step Instructions

Step 1: Add Everything to the Crockpot

Put the shredded rotisserie chicken in the crockpot. Add the carrots, celery, onion, garlic, broth, thyme, salt, pepper, and butter or oil. Give it a little stir so it mixes together. The chicken can go in cold, no need to heat it up.

Step 2: Let it Slow Cook

Put the lid on the crockpot. Cook on low for 5 to 6 hours or high for 2.5 to 3 hours. The veggies will get soft and the flavor gets real good while it cooks slow like that.

Step 3: Add Pasta, Rice, or Orzo

  • 6 Quart Slow Cooker

Ingredients

  • 2 cups shredded rotisserie chicken

 Tips
