Ingredients

For the Meatballs

  • 1 and 1 half pounds ground beef or turkey
  • 1 half cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 half teaspoon smoked paprika
  • Salt and pepper to taste

For the Chipotle Sauce

  • 1 can tomato sauce, 15 ounces
  • 2 to 3 chipotle peppers in adobo sauce, chopped
  • 1 spoon of the adobo sauce from the can
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 half cup chicken broth or water
  • Salt to taste

Step by Step Instructions

Step 1: Mix the Meatballs

Take a big bowl and add the ground beef, breadcrumbs, egg, onion, garlic, cilantro, and the spices. Use your hands and mix it gently. Do not mash it too much or the meatballs get tough.

Step 2: Shape the Meatballs

Roll the mix into small balls, about the size of a golf ball. Line them up on a plate or tray.

  • 1 15 oz can tomato sauce
  • 2 –3 chipotle peppers in adobo sauce, chopped

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ cup chicken broth or water
  • Salt to taste

Instructions
