Ingredients (a.k.a. stuff you can probably find hiding in your pantry)

  • 2 or 3 chicken breasts (boneless + skinless — we don’t got time to fight bones)
  • 1 can cream of chicken soup
  • 1 can Rotel (that’s diced tomatoes with green chilies — go mild or spicy if you’re brave)
  • 1 block cream cheese (8 oz of creamy happiness)
  • 1 cup shredded cheddar (or just eyeball it… cheese math is not real math)
  • 1/2 cup chicken broth (just a splash so it’s not dry)
  • 1 tsp garlic powder (because flavor, duh)
  • Salt and pepper (you know the drill)
  • 8 oz spaghetti noodles (break ’em in half so they don’t noodle-fight in the pot)

Step-by-Step Instructions (you got this, mama)

Step 1: Toss it all in the crockpot

Okay. Grab your chicken, cream of chicken soup, Rotel, garlic powder, chicken broth, and a lil pinch of salt + pepper. Throw it all in the crockpot. No need to mix fancy — just swirl it around a little with a spoon.

Equipment

  • 6 Quart Slow Cooker

Ingredients

  • 2 –3 boneless, skinless chicken breasts
  • 1 10.5 oz can cream of chicken soup
  • 1 10 oz can Rotel (diced tomatoes with green chilies)
  • 1 block cream cheese 8 oz
  • 1 cup cheddar cheese shredded
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • Salt to taste
  • black pepper
  • 8 oz spaghetti noodles broken in half

Instructions

Dump & Go:

  • Add chicken breasts, soup, Rotel, broth, garlic powder, salt and pepper to your crockpot. Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.

Shred the Chicken:

  • Once fully cooked, shred chicken in the crockpot using two forks.

Make it Creamy:

  • Add cream cheese and cheddar cheese. Stir until melted and creamy.

Cook Pasta:

  • While the cheese is melting, boil spaghetti noodles according to package directions. Drain.

Mix & Serve:

  • Stir cooked pasta into the crockpot. Mix well. Optional: top with extra cheese and let it melt before serving.

Notes

You can use cooked rotisserie chicken instead of raw — just cut down on the broth and reduce cook time. Want it spicier? Add red pepper flakes or hot sauce to taste!
