What You Need:

  • Chicken Breasts (boneless & skinless) – about 2 large breasts (or you can use thighs if you prefer, but chicken breasts are usually what I have on hand!)
  • Carrots – 2, peeled and sliced into rounds (or however you can get them in the pot!)
  • Celery – 2 stalks, chopped (don’t get too fancy with the chopping, it’ll all cook down)
  • Zucchini – 1, chopped (you can use more if you want, but 1 is plenty)
  • Canned Diced Tomatoes – 1 can (14.5 oz) (I usually grab whatever I have in the pantry)
  • Canned White Beans – 1 can (15 oz), drained and rinsed (I use Great Northern beans, but any white beans work)
  • Canned Red Kidney Beans – 1 can (15 oz), drained and rinsed (if you’re feeling extra, use fresh, but canned is what we’re about here)
  • Frozen Corn – 1 cup (it adds a little sweetness, trust me, it’s a good combo)
  • Chicken Broth – 4 cups (low-sodium if you want to keep it healthier, but you do you)
  • Garlic – 3 cloves, minced (or you can use garlic powder if you’re in a hurry like I often am)
  • Dried Italian Seasoning – 1 tablespoon (you could also use a mix of basil, oregano, and thyme, but the Italian seasoning is the easiest!)
  • Bay Leaves – 2 (don’t skip this step; they add flavor!)
  • Pasta – 1 cup (small shells, elbow macaroni, whatever pasta you love)
  • Parmesan Cheese – freshly grated, for garnish (because cheese = life)
  • Olive Oil – 2 tablespoons (for sautéing, unless you’re feeling lazy, then skip it)
  • Salt & Pepper – to taste (but don’t go crazy with it yet, you can adjust later)

Step-by-Step Instructions

Step 1: Prep Your Veggies

You know the drill: grab your carrots, celery, and zucchini. Chop ‘em up however you can. No one’s judging here if your pieces aren’t perfectly even, I promise. I like to slice my carrots into rounds (easier than dicing), and the zucchini just gets chopped into big chunks. Toss ‘em aside for now, ‘cause we’re going to throw everything in the crockpot anyway.

Step 2: Throw Everything in the Crockpot

Okay, this is where you’re gonna be so thankful for the crockpot. Grab your chicken breasts, carrots, celery, zucchini, diced tomatoes, white beans, kidney beans, corn, and chicken broth. Dump it all in the crockpot. Yep, that’s right. No need to overthink this. You’re doing great.

Add in your garlic, Italian seasoning, and bay leaves. Oh, and don’t forget a pinch of salt and pepper! Not too much yet though, we’ll tweak it later. Stir it up, cover it, and feel that crockpot magic start.

Step 3: Set It and Forget It

Put the lid on your crockpot and set it to low for 6-8 hours. If you’re running behind (I get it, mama), you can go for high for 4 hours. Let it do its thing while you go about your day. (I’m usually chasing after the kids or throwing in a load of laundry, but hey, that’s mom life.) You don’t need to worry about stirring every hour—just let it simmer and fill the house with that delicious aroma.

Step 4: Shred the Chicken

About 30 minutes before you’re ready to eat, take the chicken breasts out and shred ‘em up. You can use two forks to pull it apart, or if you’re feeling a bit fancy, grab your hand mixer and go to town. I’m telling you, it’s the best shortcut ever, and you’ll get perfectly shredded chicken without even breaking a sweat.

Once the chicken’s shredded, toss it back into the soup. Stir it all together and let that chicken soak up all the yummy flavors.

Step 5: Add the Pasta

Now, dump in your pasta. I usually go with small pasta like shells or elbow macaroni, but honestly, use whatever you’ve got in your pantry. If you’re short on time, cook the pasta separately and just stir it in at the end. If you’ve got the patience, let the pasta cook right in the soup for the last 30 minutes. It’ll soak up all those good flavors, and everyone will be asking for seconds.

Step 6: Taste and Adjust

Okay, here’s the moment where you get to make it your soup. Taste it and ask yourself, “Does it need more salt?” or “Is it missing something?” Add more salt, pepper, or Italian seasoning if it needs a little kick. Stir it up, let it cook for another 10 minutes if you added more stuff, and then you’re ready to serve.

Step 7: Serve and Enjoy

Scoop that hot, delicious soup into bowls, and top with some freshly grated Parmesan cheese. I mean, honestly, cheese makes everything better, right? Then, sit down, relax (for like 5 minutes before the kids start asking for more), and enjoy the fruits of your crockpot labor. You deserve it.

Absolutely! You can throw frozen chicken breasts into the crockpot—no need to thaw them first. The slow cooking process will cook them perfectly. Just remember, you may need to shred the chicken towards the end of cooking time, and it might take an extra 30 minutes or so if it’s frozen.

This soup will last about 3-4 days in the fridge. If you want to keep it longer, you can freeze it for up to 3 months. Just let it cool completely, then store in airtight containers.

Yes, you can. Simply cook everything in a large pot on the stove, bring it to a boil, then simmer for about 30-40 minutes until everything is cooked through and the flavors have melded together. Add the pasta last so it doesn’t get too soft!
