What You’ll Need (a.k.a. pantry raid time)

  • 2 boneless, skinless chicken breasts (or thighs if that’s what’s in your freezer, no judgment)
  • 1 can of black beans, drained & rinsed
  • 1 can of corn, drained (or frozen if that’s what you got!)
  • 1 can diced tomatoes with green chiles (like Rotel – spicy-ish but not scary)
  • 1 can enchilada sauce (red or green, you pick your vibe)
  • 1 small can diced green chiles (optional but YUM)
  • 2 cups chicken broth (from a box, a bouillon cube, or tears—whatever works)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • Optional but delish: 1/2 cup heavy cream OR a big ol’ spoonful of cream cheese to make it creamy

Step 1: Dump Everything In

Like, seriously. Dump it all.

  • 6 Quart Slow Cooker

Ingredients

  • Shred chicken using two forks right in the pot.

Step 4:

  • If using cream or cream cheese, stir it in now and let it melt for 10–15 minutes.

Step 5:

  • Serve with your fave toppings (cheese, chips, avocado, sour cream, etc.) and bask in the compliments.

Notes

  • Freeze leftovers in mason jars or freezer bags for an easy reheat lunch.
  • Use rotisserie chicken to cut time and toss it in during the last 30 minutes.
  • Make it spicy or mild based on the enchilada sauce and tomatoes you choose!
