There are nights when my three teenagers are all talking at once, the house is loud, and I just need dinner that is easy but also feels special. Ingredients

  • 1 cup quinoa, rinsed
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 can corn, drained (15 oz)
  • 1 can diced tomatoes with green chilies (like Rotel, 15 oz)
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 and 1 half cups vegetable broth (or chicken broth if you want)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 half teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 and a half cups shredded cheddar cheese or Mexican blend cheese
  • Fresh cilantro for topping (optional)
  • Lime wedges for topping (optional)

Step by Step Instructions

Step 1: Add everything in

Take your rinsed quinoa, beans, corn, tomatoes, onion, bell pepper, garlic, broth, and seasonings. Put them all into the crockpot. Give it a good stir so the spices spread out.

Step 2: Let it cook

Put the lid on and cook it on high for 2 and a half to 3 hours or on low for 5 to 6 hours. The quinoa will get soft and fluffy and the veggies will be tender.

Step 3: Stir in the cheese

Once it is all cooked, sprinkle your shredded cheese right on top. Stir it around until it melts and makes everything creamy and cheesy.

Instructions
