Ohhh girl, let me just start by sayin’—if you’re a busy mom like me (three kids, laundry piles taller than I am, and a toddler who thinks napping is optional), then Crockpot dinners are seriously life. I’m talkin’ throw it in, forget it, and come back to dinner magically done. Yes please.

Now if you’re googling things like Best Crockpot Recipes, Easy Crockpot Dinners, or even How to Cook Pasta in Crockpot without it turning into mush, you’re in the right spot. I’ve tested more crockpot pasta recipes than I can count (some winners, some total flops), and lemme just say—this one? It’s a keeper.

This recipe is a mash-up of all the good things:
-creamy spaghetti,
-gooey cheese,
-no-boil noodles,
-and minimal dishes.

It’s like the dream child of Crock Pot Baked Spaghetti and Slow Cooker Pasta Recipes, but with way less effort. Whether you call it Spaghetti In The Crockpot, Crockpot Spaghetti, or just plain old “that cheesy noodle thing the kids will actually eat,” this one hits.

And YES—you really can make spaghetti in a crockpot. Like actual spaghetti noodles in there. I didn’t believe it either until I tried it. Now I’m out here converting all my mom friends to the Crockpot Spaghetti Recipes Easy club, lol.

So if you’re lookin’ for a simple spaghetti recipe that doesn’t require babysitting a boiling pot (because let’s be real, someone’s gonna need a snack the second the water boils), this slow cooker spaghetti is your new BFF.

Let’s make some dinner magic, shall we?

Here’s what you’ll need:

  • 2–3 boneless, skinless chicken breasts (or thighs if that’s what ya got)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
(or just use 2 cream of chicken if mushrooms give you the ick)
  • 1 can Rotel (that’s diced tomatoes + green chiles – not too spicy, promise!)
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • 8 oz Velveeta cheese, cut in chunks
  • 1/2 cup shredded cheddar cheese
  • 8 oz spaghetti noodles (half a regular box)
  • Optional: chopped parsley if you wanna feel fancy

Step-by-Step Instructions

Step 1: Toss it all in the crockpot

Okay, so just grab your crockpot (aka lifesaver) and throw in the chicken, both cans of soup, Rotel, broth, garlic powder, onion powder, and a little salt and pepper. Mix it up a bit. Doesn’t have to be perfect—just get it cozy in there.

Set it on low for 6–7 hours or high for 3–4 hours. Go do your thing. School run, laundry, toddler negotiations… you got this.

Step 2: Shred that chicken

Once the chicken’s nice and tender (like it basically falls apart when you poke it), take it out and shred it up with two forks. I just do it right on a cutting board while hollering at my kids to quit climbing the furniture.

Throw the shredded chicken back into the crockpot.

Step 3: Get cheesy with it

Now for the magic. Add your Velveeta chunks and cheddar cheese to the crockpot. Stir it all in and let it melt into a glorious cheesy mess. This takes like 10–15 minutes on high. It’ll smell so good, your kids might actually ask what’s for dinner instead of begging for cereal.

Step 4: Boil them noodles

While the cheese is melting, go ahead and cook your spaghetti noodles on the stove. Don’t overcook ’em—you want them just tender. Drain ’em and then add them right into the cheesy chicken mixture in the crockpot.

Mix it all together real good.

Step 5: Serve it up!

Taste it and add more salt or pepper if ya want. If you’ve got some parsley, sprinkle a little on top to impress yourself. Serve it up in big ol’ bowls and enjoy the peace of not hearing “I don’t like this” for once.

FAQs – Crockpot Spaghetti Edition

Can I put uncooked spaghetti noodles in the crockpot?

You can, but I don’t usually recommend it unless the recipe is made for that. Noodles can get weird and mushy real fast if they sit too long. For this recipe, I cook the noodles separately and stir them in at the end—it’s still easy and keeps the texture just right!

Do I have to use Velveeta?

Look… I know Velveeta gets a bad rap, but for this one? It’s a game-changer. It melts so smooth and creamy. You could try block cheddar or cream cheese if you’re not a Velveeta fan, but the texture might be different. I say give it a shot—you might be surprised!

Can I use frozen chicken?

Yup! I toss frozen chicken breasts in all the time. Just make sure to cook it a little longer—like the full 7 hours on low. And always check that it’s fully cooked before shredding (internal temp should hit 165°F).

What if I don’t like Rotel?

Totally fine—swap it for a can of plain diced tomatoes. Want no tomato chunks at all? Use tomato sauce instead. This recipe is super flexible. You do you, mama.

Will my picky eater eat this?

Mine do. And that’s sayin’ something 😅 It’s creamy, cheesy, and not too spicy. If your kid’s suspicious of tomatoes, you can even blend the Rotel or skip it. They usually don’t even notice.
