Ingredients You Will Need

  • 3 medium sweet potatoes, peeled and diced
  • 2 cans black beans, drained and rinsed
  • 1 can fire roasted diced tomatoes (14 oz)
  • 1 small onion, diced
  • 2 cloves garlic, minced

  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • Tortillas (corn or flour, your choice)

Optional toppings: avocado slices, sour cream, shredded cheese, salsa, pickled onions, cilantro, lime wedges


Step by Step Instructions

Step 1: Add everything to the crockpot
