Ingredients You Will Need

  • 3 to 4 pounds beef chuck roast (or short ribs if you want it extra rich)
  • 4 dried guajillo peppers, stems and seeds removed
  • 2 dried ancho peppers, stems and seeds removed
  • 2 dried pasilla peppers, optional but adds more flavor
  • 1 medium onion, quartered
  • 5 garlic cloves
  • 2 roma tomatoes, roasted or boiled
  • 1 chipotle pepper in adobo sauce plus 1 spoon adobo sauce
  • 2 teaspoons cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 small pinch cinnamon
  • 2 to 3 bay leaves
  • 2 cups beef broth
  • ½ cup apple cider vinegar
  • Salt and pepper to taste

Step by Step Instructions

Step 1: Prep the peppers

Boil a small pot of water. Turn off the heat and add the guajillo, ancho, and pasilla peppers. Let them soak for about 15 minutes until they get soft.

Step 2: Make the sauce

In a blender add the soft peppers, onion, garlic, roasted tomatoes, chipotle, adobo sauce, vinegar, cumin, oregano, paprika, cinnamon, and 1 cup of beef broth. Blend until smooth.

Step 3: Brown the beef

This part is optional but it adds good flavor. Heat a skillet with a little oil and sear the beef on each side until browned. If you are busy and cannot do it just skip.

Step 4: Add to crockpot

Put the beef inside the crockpot. Pour the sauce over it. Add the rest of the broth and the bay leaves. Sprinkle some salt and pepper.

Step 5: Cook low and slow

Put the lid on. Cook on low for 8 to 9 hours or on high for 5 to 6 hours. The meat should be soft enough to fall apart.

Step 6: Shred and eat

Take the beef out and shred it with two forks. Put it back in the broth so it soaks all the flavor.

  • 6 Quart Slow Cooker
