Ingredients You’ll Need

(aka stuff you probably already have hangin’ out in the pantry or freezer)

  • 2–3 chicken breasts (boneless, skinless—I use frozen straight from the bag and pray for the best)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can Rotel (that’s the diced tomatoes with green chilis—adds flavor without being spicy)
  • 1 block cream cheese (8 oz, just chop it up into big chunks)
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper (eyeball it, mama—you got this)
  • 12 oz spaghetti noodles
  • Optional: parsley to make it look cute

Step By Step Instructions

Step 1: Toss It All In

In the morning (or honestly whenever you remember), grab your crockpot. Drop in the chicken breasts, then dump in the cream of chicken soup, cream of mushroom soup, and the whole can of Rotel. Add your seasonings—garlic powder, onion powder, and a lil salt & pepper.

Then go ahead and drop those cream cheese chunks on top. No need to stir. Seriously. You’ve already done enough.

Step 2: Let the Crockpot Do Its Thing

Put the lid on and cook it on LOW for 6–7 hours or HIGH for 3–4 hours. That’s it. Walk away. Go live your life. Fold the laundry (or just pretend to), run to school pickup, answer 743 questions about Minecraft. Whatever.

And bonus—your whole house is gonna smell AMAZING. Like you cooked a gourmet meal even though you’ve just been reheating your coffee all day.

Step 3: Shred the Chicken

When the time’s up, the chicken should be super tender. Grab two forks and shred it up right in the crockpot. It falls apart like a dream. And don’t worry if it looks a little gloopy—it’s all gonna come together. Just trust the process, girl.

Step 4: Cook the Spaghetti

Boil your noodles according to the box instructions. I usually do it while yelling “Don’t touch that!” across the house. Drain ’em and don’t rinse. You want that starch to help everything cling together like your toddler clings to your leg at Target.

Step 5: Mix It All Together

Toss the cooked spaghetti into the crockpot with the shredded chicken mix. Give it a good stir. Add in that shredded cheddar cheese. It’ll melt in all nice and gooey. This is where the magic really happens.

Optional, but highly encouraged: take a sneaky taste before serving. For quality control, obviously.

Step 6: Serve It Up & Look Fancy

Scoop it onto plates or bowls (we’re a paper plate family some nights, no shame). Sprinkle a little parsley on top if you wanna impress someone—even if it’s just yourself.

Pair with some garlic bread, a salad, or let’s be real… a side of Goldfish crackers if that’s all the kids will eat today.

FAQs About Crockpot Spaghetti

Can you really cook pasta in the crockpot?

Yes, girl, you totally can! Just make sure you don’t add it too early or it’ll turn to mushy sadness. For best results, cook the spaghetti separately and stir it in at the end. Some brave souls toss it in uncooked during the last 30–40 minutes, but I like to play it safe—my toddlers are picky and dramatic.

Can I use different kinds of pasta?

Absolutely! This recipe is super forgiving. You can use penne, rotini, bowtie—whatever you’ve got in the pantry. Just make sure it’s cooked before you toss it in unless you’re going for the bold, dump-it-all-in style (no judgment, I’ve been there).

What if I don’t have cream of mushroom soup?

No worries! You can double up on the cream of chicken, or swap with cream of celery or even cream of cheddar. Honestly, this recipe isn’t picky—just like we aren’t when we’re trying to get dinner on the table before dance practice.

Can I add more cheese?

Um… always. I usually top it with even more shredded cheese right before serving. Cheesy is a lifestyle around here.

Can you freeze Crockpot Spaghetti?

You bet! Let it cool completely, then pop it in a freezer bag or container. It freezes for up to 2 months. Just thaw overnight in the fridge and reheat low and slow. Dinner, done. Future-you will high five present-you.
