I have a big fondness for cheesecakes. And when I get to eat two of my favorite things in one. Then I just do not wait to get my hands on it. Cheesecake and Ice Cream. It looks like a marriage made in heaven.
I love the Blueberry Cheesecake Ice Cream Recipe. The creamy, soft cheesecake ice cream and the perfect blueberry sauce. I simply love it.
I am so glad I have it right on my freezer as I am typing this post. It would have been difficult to write otherwise without salivating so much.
The main difference that you will find from other ice cream creams, is that, I have made the blueberry sauce. I like to have the chilled sauce separately with the ice cream. But you can always just pour the blueberry sauce over the cheesecake mixture and freeze together.
You can make really cool swirls in the mixture for that amazing look in the ice cream. I do make it that way too. But totally relish the syrup with it.
I haven’t pureed or mashed the blueberries. I love the texture of whole blueberries in the mouth when they hit the tongue with the ice cream. But you can always puree or mash them up.
There is no one correct way of enjoying this Blueberry Cheesecake Ice Cream Recipe. Make and enjoy in any form that you love.
Tips for making the perfect blueberry cheesecake ice cream recipe
- Chill the bowl and the whisk attachment before using them for beating. It helps the process of beating easier.
- Do not over freeze the ice cream or it will turn too hard. For me, it turns out perfect in about 5 to 6 hours. If you have left it in the freezer for too long, just remove it outside to room temperature for 5 to 10 minutes before serving.
- You can pour the cooled down blueberry syrup to the cream cheese mixture and make swirls and freeze it together. Or thoroughly mix it along with cream cheese mixture to get a nice blue colored ice cream.

Blueberry Cheesecake Ice Cream Recipe
Ingredients
- 2 cups double cream chilled
- 1 can / 400 gms sweetened condensed milk
- 200 gms cream cheese
- 4 tbsp sugar
- 2 tsp vanilla essence
For the blueberry syrup
- 1 cup blueberries
- 4 tbsp sugar
- 1/2 cup water
Instructions
For the cream cheese
- Beat cream cheese in a bowl till smooth with a hand mixer.
- Add in the vanilla essence, sugar, condensed milk and beat until well combined.
- Throw in the double cream and beat till the mixture gets thick.
- Pour in a container and freeze till set. (It takes approximately 5 to 6 hours for my freezer to set it perfectly.)
For the blueberry syrup
- Add the blueberries, sugar and water in a pan and boil for 4 to 5 minutes till the blueberries are soft and pulpy
- Remove from fire and allow it to cool. Chill it in the refrigerator till the ice cream is ready to serve.
For the ice cream
- Scoop the frozen ice cream. Pour the chilled blueberry syrup and serve.

This ice cream is bringing back so many college memories. I had a late night class and on my way to class, I would always stop by the Baskin Robbins for a scoop of Raspberry Cheese Louisse Ice Cream. It was a lovely ice cream that had chunks of cheesecake and a ribbon of raspberry swirled throughout. It’s been years since I last had it. . .but I’m thinking I might have to make your beautiful ice cream and relive those memories.
