When the mangoes are in town, we make full use of it by having them daily. Though it would be unfair to say that we get them in season, as, in Dubai, you will find mangoes throughout the year, strange as it may sound, from various countries.
But we don’t tend to buy those mangoes and wait for the mangoes to get in season to relish the most delicious and juicy Alphonso or Badami variety. These are our top two picks for relishing the king of the fruits. When you see any mango recipe in my blog, you can be more than assured that it will either be from Alphonso or Badami variety, unless I have mentioned the exception.
However, you can make it with any kind of variety that you relish. This is our personal preference and it maybe totally different from what you enjoy. So never mind the variety and just follow the instructions to make the most amazing Aamras Recipe or the mango puree recipe.
Now Aamras Recipe or the mango puree recipe is nothing but a form of mango puree. Typically served along with puri, you will find the Aamras Recipe or the mango puree recipe served along with any Gujarati thali while the mangoes are in season. I have even been served this as a thick welcome drink in a Gujarati restaurant.
I have added jaggery while making this Aamras Recipe or the mango puree recipe as I try to avoid sugar as much as possible from our diet. Not that I am very much successful with that, but then no harm trying, right?
I have also added a dash of saffron to the Aamras Recipe or the mango puree recipe to elevate the taste to an altogether different level. You can, however, omit it. I love the color that we get from adding the saffron.
And add or reduce milk to get the consistency of your choice to make this. There is no hard or fast rule to the consistency as I have relished it in all types of consistency.

- 2 cups mangoes, (Alphonso or Badami, or any other variety of your choice)
- 1/2 cup of milk or as required to make a thick paste.
- 2 tbsp of jaggery
- a big pinch of saffron strands
